A nice side or breakfast dish is Home Fries! I like to zip them up a bit by adding: fresh garlic, onion, green peppers and red pepper.

French Onion Tart

This is an easy recipe for a Vegan French Onion Tart. Your guests will be impressed with your sophisticated dish.

Ingredients:

* 3 tbsp olive oil
* 3 tbsp brown sugar
* 1 tbsp balsamic vinegar
* 2 tbsp wholegrain mustard
* 2 garlic gloves - pressed
* 12 small yellow onions finely sliced
* Salt and pepper, to taste
* One pie crust (See my apple pie recipe)

Directions:

1. Heat the olive oil in a non-stick pan and add your onions finely sliced (not diced!).
2. Cover and cook gently for about 15 minutes, until they become all soft, make sure you stir them or they will burn.
3. Add your crushed garlic, salt and pepper, sautee for another 15 minutes.
4. Put your pie crust (in a oiled, deep dish pie pan) in the oven at 350 degrees, filled with beans. The dried beans will keep it from bubbling up, bake for 10 minutes.
5. Remove the pie crust from the oven, remove the beans. Dish your onion sautee in to the crust and bake for 15 - 20 minutes, until it is brown.

Serve! This dish is best served warmed and tastes great the next day.
