Dine-In Brooklyn, Brooklyn's sixth annual Restaurant Week, is March 23 - April 2, 2009. The price for brunch for two or a three course lunch or a three-course dinner is a bargain at $23.00. (Beverages, tax, and tip not included and some restaurants are only participating in lunch (L), brunch (B) or dinner (D), some are doing all three).

Red Bamboo, one of my favorite vegetarian restaurants, is participating. Treat yourself to a good meal and 'stimulate the economy'.

Stu's Famous Baked Tofu

Stu's tofu is easy to make, then just bake!

Cut tofu in to 1/2 in strips
Dip in soy sauce
Bread with vegan bread crumbs...
Then bake - 20 minutes on each side at 350 degrees.

Great for dinner or to bring to a party.

* 1 tub Toffutti Cream Cheese
* 1 Box Vanilla Cake Mix
* 1/2 Cup of Earth Balance
* 1 tsp. Vanilla

Bake for 8 - 10 minutes on 350 degrees

French Onion Tart

This is an easy recipe for a Vegan French Onion Tart. Your guests will be impressed with your sophisticated dish.

Ingredients:

* 3 tbsp olive oil
* 3 tbsp brown sugar
* 1 tbsp balsamic vinegar
* 2 tbsp wholegrain mustard
* 2 garlic gloves - pressed
* 12 small yellow onions finely sliced
* Salt and pepper, to taste
* One pie crust (See my apple pie recipe)

Directions:

1. Heat the olive oil in a non-stick pan and add your onions finely sliced (not diced!).
2. Cover and cook gently for about 15 minutes, until they become all soft, make sure you stir them or they will burn.
3. Add your crushed garlic, salt and pepper, sautee for another 15 minutes.
4. Put your pie crust (in a oiled, deep dish pie pan) in the oven at 350 degrees, filled with beans. The dried beans will keep it from bubbling up, bake for 10 minutes.
5. Remove the pie crust from the oven, remove the beans. Dish your onion sautee in to the crust and bake for 15 - 20 minutes, until it is brown.

Serve! This dish is best served warmed and tastes great the next day.

Chikn' Noodle Soup

Feeling a little under the weather in this cold weather? Try some Chikn’ Noodle Soup.

Ingredients:

* ¼ pound of small pastini
* 3 cups vegetable broth
* 3 cups water
* 1 large onion
* 3 carrots
* 4 stalks of celery
* 4 cloves of garlic – pressed
* 2 tablespoon olive oil
* ½ a package of Morning Star Farms Chik’n Strips

Directions:

1. Boil pastini for two minutes shorter than the time stated on the package – it should still be firm, set aside.
2. In a frying pan sauté onion, carrots, garlic and celery in olive oil.
3. In a large stockpot combine water and vegetable broth.
4. When vegetable mix is browned in the frying pan, add the mixture to the stock/water mix.
5. Chop Chik’n strips in to inch long pieces and then add to the soup mix.
6. Add pre-cooked pasta to the soup and raise the heat.
7. Cook till the soup is warm, testing the chicken and the pasta to see if it is done.
8. Add season salt and cayenne pepper to taste – serve.
